Even though summer is not technically over yet, Labor Day marks summer's unofficial end. This means there will no longer be lazy days lounging by the pool, shortened Friday workdays, family beach vacations, and cookouts.
Before the 21st of September, however, you have a three-day weekend that you can enjoy, so be sure you make the most out of it! Prepare the recipes we have for you below and you are sure to have a great Labor Day party.
Appetizer: Serrano Ham and Spicy Melon
Ingredients

2 star anise
-
5 whole cloves

1 stick of cinnamon

1 tsp coriander seeds
-
1 cup of white wine vinegar
-
1 cup of water
-
Half a cup of white sugar
-
3 pieces of lemon rind
-
¼ peeled and cubed seedless watermelon
-
½ peeled and cubed cantaloupe
-
8 thin slices of Serrano ham
-
1 cup of mixed olives
-
Olive oil
-
Kosher salt
Directions

In a medium-sized saucepan, combine your star anise, cloves, coriander seeds, cinnamon stick, water, vinegar, lemon rind, and sugar. Then, simmer the ingredients on medium heat. Let it simmer for at least 3 minutes.

Cut the cantaloupe and watermelon into large, roughly even cubes. After which, drop the cubes into a pickling liquid. Give about 1 minute for the melon to pickle. This will give the melon exotic flavors as they will infuse into the melon's flesh lightly.

To serve, get your ham and lay 2 slices at the center of your serving plate. Top it with a mound of your pickled melons. Drizzle olive oil then scatter a couple of olives. Repeat this process with the ingredients that are left.

Salad: Insalata Caprese
Ingredients

2 large, thickly sliced tomatoes

2 1-pound balls of mozzarella, thickly sliced

4 fresh leaves of basil

Salt

Extra-virgin olive oil
Directions
On a plate, get your slices of mozzarella and tomatoes and arrange them by alternating one after another. Also, fan them out. Then, tear fresh basil over your salad. Drizzle with extra-virgin olive oil and add a bit of salt.
Main: Lobster Sandwiches with Lime Mayonnaise
Ingredients

1/2 cup of mayonnaise

2 tablespoons of chopped fresh chives
-
2 tablespoons of lime juice
-
Sea salt and black pepper
-
1 loaf of sliced white bread
-
2 pound cooked, shelled, sliced lobster
-
1 thinly sliced Lebanese cucumber

1 cup of fresh cilantro leaves
Directions
In a bowl, add your mayonnaise, lime juice, and chopped chives. Season well with your black pepper (freshly cracked) and sea salt. Stir ingredients until combined.
Spread some of your prepared mayonnaise into the bottom bread slices. Then, top all of them with pieces of cilantro, cucumber, and lobster. Repeat until you run out of bread slices and ingredients, and then serve.
Main: Grilled Chicken Skewers with Peanut-Coconut Sauce
Ingredients
For the Chicken:

1/4 cup of soy sauce

3 tablespoons of dark brown sugar

Zest of 1 lime

2 tablespoons of vegetable oil

3 garlic cloves
-
1 tablespoon of curry powder
-
1/2 teaspoon of ground ginger
-
1/4 teaspoon of ground cardamom
-
1/2 teaspoon of salt
-
3 pounds skinless, boneless chicken breasts
For the Sauce:

1 (13-oz) can of coconut milk *not low fat
-
1/4 cup of peanut butter
-
1/3 cup of dark brown sugar
-
1-1/2 tablespoons of soy sauce
-
1 tablespoon of red curry paste
-
3 tablespoons of fresh lime juice
Directions
Set aside breasts after cutting them into 1 inch pieces. Marinade by combining dark brown sugar, soy sauce, vegetable oil, lime zest, curry powder, garlic, salt, and cardamom. Add the chicken to the bowl. Mix until chicken becomes evenly coated. To make the sauce, whisk together your coconut milk, brown sugar, peanut butter, red curry paste, and soy sauce. Stir occasionally and let it simmer for 3 minutes. Set aside after adding lime juice. Take out your chicken and thread them onto skewers. Now, you are ready for grilling!
Dessert: Yogurt with Minty Gremolata
Ingredients

2/3 cup of white sugar

2/3 cup of brown sugar
-
1/4 cup finely chopped fresh mint
-
1 teaspoon of ground cinnamon
-
Zest of 2 limes
-
1 cup of corn flakes
-
1 cup of plain yogurt
Directions
In a medium-sized bowl, mix your brown sugar, white sugar, cinnamon, lime zest, and mint together. For the serving, add a quarter cup of corn flakes at the bottom of each glass. Dollop the yogurt right at the top of the cornflakes. Lastly, add a generous amount of your minty gremolata.
