Ingredients

  • 2 star anise

  • 5 whole cloves

  • 1 stick of cinnamon

  • 1 tsp coriander seeds

  • 1 cup of white wine vinegar

  • 1 cup of water

  • Half a cup of white sugar

  • 3 pieces of lemon rind

  • ¼ peeled and cubed seedless watermelon

  • ½ peeled and cubed cantaloupe

  • 8 thin slices of Serrano ham

  • 1 cup of mixed olives

  • Olive oil

  • Kosher salt

Directions

  1. In a medium-sized saucepan, combine your star anise, cloves, coriander seeds, cinnamon stick, water, vinegar, lemon rind, and sugar. Then, simmer the ingredients on medium heat. Let it simmer for at least 3 minutes.

  2. Cut the cantaloupe and watermelon into large, roughly even cubes. After which, drop the cubes into a pickling liquid. Give about 1 minute for the melon to pickle. This will give the melon exotic flavors as they will infuse into the melon's flesh lightly.

  3. To serve, get your ham and lay 2 slices at the center of your serving plate. Top it with a mound of your pickled melons. Drizzle olive oil then scatter a couple of olives. Repeat this process with the ingredients that are left.
